Starters

  • Pumpkin, gorgonzola and crispy sage soup
  • Wild game and foie gras terrine on toasted brioche with date, apricot and sultana chutney
  • Smoked salmon and crayfish ballotine, pea shout and lemon salad, rocket oil
  • Baked goat cheese and caramelised fig, port syrup and candied pecan nuts

Main Courses

  • Porcini mushroom Pithivier, sauté butternut squash, carrots, potato, celery and chestnut, mulled wine syrup and chervil cress
  • Pan roast Venison steak with Brussels sprouts, carrots, roast parsnips, blackcurrant and red wine sauce
  • Roast turkey, fondant potato, celeriac puree and winter greens, brandy sauce
  • Poached sea bass, snapper and cod in fish broth with saffron potatoes, patison, mussels and rouille croutons
