- Pumpkin, gorgonzola and crispy sage soup
- Wild game and foie gras terrine on toasted brioche with date, apricot and sultana chutney
- Smoked salmon and crayfish ballotine, pea shout and lemon salad, rocket oil
- Baked goat cheese and caramelised fig, port syrup and candied pecan nuts
Main Courses
- Porcini mushroom Pithivier, sauté butternut squash, carrots, potato, celery and chestnut, mulled wine syrup and chervil cress
- Pan roast Venison steak with Brussels sprouts, carrots, roast parsnips, blackcurrant and red wine sauce
- Roast turkey, fondant potato, celeriac puree and winter greens, brandy sauce
- Poached sea bass, snapper and cod in fish broth with saffron potatoes, patison, mussels and rouille croutons
